Vanilla notes are created with many ingredients, including vanilla absolute, vanilla CO2 extract, benzoin, tolu balsam, Peru balsam, vanillin, ethyl vanillin, and many other synthetic ingredients with vanilla facets. Vanilla absolute is extracted from Vanilla planifolia, which is a plant in the orchid family. The beans are labor intensive to grow and process, so vanilla absolute is expensive. The two most common varieties are Bourbon/Madagascar (V. planifolia) and Tahitian (V. tahitensis).
