Sichuan pepper is a spice harvested from several species in the genus Zanthoxylum. It is often used in Asian cuisine, and the fragrant oil extracted from it can be used in perfume. In cooking, only the hull is ground and used; the black seed inside the hull is discarded. The CO2 extract has a fresh, zingy topnote with a citrus nuance, and the drydown is woody and spicy but still retains an element of freshness.
